Mediterranean Salad with Agrifarm Lentils

Ready for a cool and nutritious Mediterranean-scented salad? This salad with lentils, vegetables, feta and avocado is the perfect choice for one complete, tasty and filling meal! The fine lentils of Agrifarm are of the Greek variety “Samos”, which is a source iron and calcium and is rich in protein and fiber! In addition, the “Samos” variety is characterized by excellent boiling and has a special taste!

Agrifarm supports young farmers and sustainable cultivation with fine lentils to be produced in Agios Konstantinos Farsalon (Thessaly) exclusively by Groups Young Farmers and in the framework of the Refarming Greece initiative, for sustainable return of young people to the villages!

In this recipe we will frame an amazing raw material with Mediterranean ingredients and we will create a nutritious salad, rich in protein, fiber, source calcium and iron and… low in sugars!

Ingredients (4 servings):

  • 1 pack of fine Agrifarm lentils
  •  2 avocados
  •  20 cherry tomatoes
  •  200g feta
  • 4 small cucumbers (or 2 large)

1. Boil the lentils for about 10 ‘and rinse them in the tap. We transport them back in the pot and boil them again until they become al dente.

2. Cut the avocado, cherry tomatoes and cucumbers and grate / break into pieces of feta.

3. Add all the ingredients in a bowl.

4. We enjoy!

Optionally, you can also add: A little bit of olive oil, Balsamic vinegar, Pepper, Lemon, Onion, Herbs, Dressing of your choice
