Cretan Traditional Cheese Pie (Sfakiani Pita) Recipe
At myGreekTaste we love honey as a product which combines sweetness, nutrients and great texture. An ideal recipe to enjoy a quality honey is Sfakiani Pita or Sfakianopita . Actually is a pan cooked flat bread stuffed with Mizithra (a ricotta-like cheese) , which is served with a generous amount of honey right after it is removed from the heat.
Ingredients for 6 servings:
For the dough:
- 300 g all-purpose flour
- 100 g water
- 20 gr. raki (or other high alc. vol. white drink)
- 1 tablespoon(s) olive oil
- 1/4 teaspoon(s) salt
For the Filling
• 300 g mizithra ( or other ricotta-like cheese)
For the serving
• 6 tablespoon(s) honey
Instructions
- Knead all ingredients for the dough by hand or with a stand mixer until it forms a soft dough.
- Divide into 6 equal parts, shape them into a ball and let them aside.
- Beat the cheese with a whisker or a fork until it brakes into a mass and can be shaped into 6 balls.
- Roll out each ball of the dough into a sheet big enough to cover the cheesy ball that we will place in the middle.
- We cover the cheese with the dough and we roll out again the pie into the final shape and size.
- We cook the pie in a small nonstick pan with a drizzle of olive oil on medium high heat.
- The pie it will be ready after cooking 2-3 minutes for each side.
- We served with the honey while the pie is still warm.
