Twisted Greek salad recipe with nectarine and orange.
The greek salad is characterized by the sweet taste of the tomato that is at its best in summer. At the summer, however, other fruits thrive that can bring out the aromas of the tomato. In this particular recipe I chose orange and nectarine for this purpose, but we could definitely try strawberries, kiwi or even pineapple.
Ingredients
- 2 large tomatoes
- 1 big chunk feta cheese
- 1 medium onion
- 1 green pepper
- 1 red pepper
- 1 medium cucumber
- 1 medium orange
- 1 large nectarine
- 4-6 tbsp. Olive oil soup (recommended)
- 2 tbsp. Vinegar (recommended)
- thyme (recommended)
- salt (recommended)
- pepper
- parsley
In a deep bowl, cut all the vegetables into different sizes and irregular shapes so that we have a different texture in each bite. Add the salt and vinegar and then the feta, before garnish with the olive oil, the pepper and the parsley. If we want to keep the salad vegan friendly obviously we can skip the feta cheese. Finally, the combinations are endless as we can add olives, capers and any other pickle we like.
